Ingredients

  • 2 lb ground chicken.
  • ¼ cup cream cheese.
  • 3 garlic cloves – crushed.
  • 1 small yellow onion- chopped.
  • 2 Tablespoon flour.
  • 2 Tablespoon olive oil.
  • 1 teaspoon salt – or to your taste.
  • ½ teaspoon cardamom powder.
  • ½ teaspoon black pepper.
  • ½ teaspoon paprika.
  • ½ teaspoon ginger powder.
  • ¼ cup of green olives, pitted and chopped.
  • 4 cardamom pods and 2 bay leaves (for boiling water).

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 1-2 minutes until it becomes fragrant and slightly softened. Remove the skillet from the heat and immediately stir in the crushed garlic. Continue stirring for about 30 seconds, allowing the residual heat to warm the garlic without burning it. Set aside to cool slightly.
  2. In a large mixing bowl, combine the ground chicken, all the listed spices (salt, cardamom powder, black pepper, paprika, ginger powder), and the sautéed onion and garlic mixture. Using your hands, mix all the ingredients thoroughly until well combined.
  3. For an extra smooth and rich texture, take about one-quarter of the ground chicken mixture and process it with the cream cheese in a food processor until fully incorporated and smooth. Then, add this processed mixture back into the main bowl with the rest of the ground chicken and mix everything together again until evenly distributed. This step ensures a uniform texture and flavor throughout the roll.
  4. Sprinkle the flour over the ground chicken mixture and mix well. Lay out a piece of parchment paper on a clean surface. Evenly spread the ground meat mixture onto the parchment paper to form a rectangle. Arrange the chopped green olives down the center of the meat rectangle. Carefully roll the mixture into a tight log using the parchment paper to guide you. Once formed, wrap the log tightly in another piece of aluminum foil, twisting the ends securely to seal it.
  5. In a deep pot or Dutch oven, add enough water to fully cover the chicken log. Add the cardamom pods and bay leaves to the water, then bring it to a rolling boil over high heat. These aromatic additions will subtly infuse the chicken with flavor as it cooks.
