What is Chicken Scampi?

Originating from Italian-American cuisine, “scampi” in its purest Italian form refers to langoustines – small, delicate crustaceans. However, in American culinary interpretation, “scampi” has evolved to describe a cooking style and a type of sauce, most commonly associated with shrimp. Shrimp scampi is a wildly popular dish featuring shrimp sautéed in a garlic butter sauce, often with white wine, lemon juice, and parsley, served over pasta.

Chicken scampi takes this beloved sauce and pairs it with tender chicken instead of shrimp, offering a versatile and equally delicious alternative. Our Olive Garden copycat version captures the essence of this dish by using perfectly cooked chicken tenderloins, a rich, savory garlic butter sauce, vibrant bell peppers, and onions, all tossed with pasta. It delivers that signature buttery, garlicky, and slightly tangy flavor profile that makes scampi so irresistible, adapted to be a hearty and satisfying chicken entree. This rendition, being wine-free, provides a broader appeal while still delivering authentic taste.

Ingredients for the Perfect Chicken Scampi

Crafting this incredible dish starts with selecting the right ingredients. Here’s a closer look at what you’ll need to create your restaurant-quality Olive Garden Chicken Scampi at home. You’ll find the full, precise measurements and detailed instructions in the printable recipe card at the bottom of this page.

  • **Chicken Tenderloins:** While thin-sliced chicken breasts can be used, chicken tenderloins are highly recommended. Their natural tenderness ensures they cook quickly and remain juicy, even if slightly overcooked, making them a very forgiving choice for this recipe.
  • **All-Purpose Flour:** This is essential for dredging the chicken, which helps create a beautiful golden crust when seared and contributes to thickening the sauce later on.
  • **Olive Oil and Unsalted Butter:** The combination of these two fats is key. Olive oil provides a higher smoke point for searing, while butter adds an unparalleled richness and flavor to both the chicken and the scampi sauce. Using unsalted butter allows you to control the overall saltiness of the dish.
  • **Red Onion and Bell Peppers (Red, Green, Orange):** These vegetables add vibrant color, a subtle sweetness, and a delightful crunch to the dish. Thinly slicing them ensures they cook quickly and meld perfectly with the other flavors. Don’t hesitate to use a combination of colors for visual appeal.
  • **Fresh Garlic:** Minced garlic is the heart of any scampi sauce. Use fresh garlic for the most potent and authentic flavor. The aroma alone will make your kitchen smell incredible!
  • **Chicken Broth:** This forms the liquid base of the sauce, providing depth and savory notes. Opt for a good quality low-sodium broth to control seasoning.
  • **Heavy Cream:** For that signature creamy, luxurious texture that defines the Olive Garden experience. It enriches the sauce beautifully, making it velvety smooth.
  • **Lemon Juice:** A squeeze of fresh lemon juice is crucial for balancing the richness of the butter and cream. It adds a bright, zesty tang that cuts through the fat and elevates all the other flavors.
  • **Seasonings (Salt, Black Pepper, Italian Seasoning):** A simple blend of salt, black pepper, and Italian seasoning is all you need to perfectly flavor the chicken and the sauce. Italian seasoning typically includes a mix of oregano, basil, thyme, and rosemary.
  • **Angel Hair Pasta:** This delicate, thin pasta is the traditional choice for scampi dishes, as its fine strands perfectly absorb the rich sauce. However, feel free to use spaghetti, linguine, or fettuccine if preferred.
  • **Garnish (Parmesan Cheese, Fresh Parsley, Red Pepper Flakes):** These optional garnishes add a final flourish of flavor and visual appeal. Grated Parmesan cheese provides a salty, umami kick, fresh parsley adds a touch of herbaceous freshness, and red pepper flakes offer a hint of warmth if you like a little spice.

With these high-quality ingredients ready, you’re well on your way to creating a truly unforgettable chicken scampi at home.

Step-by-Step Instructions for Homemade Chicken Scampi

Recreating the magic of Olive Garden’s Chicken Scampi at home is simpler than you might think. Follow these detailed steps to achieve a perfectly cooked, flavorful dish. Remember, the full, detailed instructions are available in the recipe card below.

  1. **Prepare the Chicken and Seasoning:** In a small bowl, combine your salt, black pepper, and Italian seasoning. Mix these spices thoroughly. Take your chicken tenderloins and generously season them on both sides with this mixture, ensuring each piece is well coated.
  2. **Dredge the Chicken:** Pour the all-purpose flour into a shallow dish or a wide container. If you have any leftover seasoning mixture, add it to the flour and stir well for extra flavor. Dredge each seasoned chicken tenderloin in the flour, turning to coat both sides. Gently shake off any excess flour and set the chicken aside. You’ll likely have some flour mixture remaining; keep it, as it will be used for the sauce.
  3. **Sauté the Vegetables:** Heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a large skillet over medium heat. Once the butter is melted and shimmering, add your thinly sliced red onion and bell peppers. Sauté these vegetables for about 3 minutes, or until they are lightly softened but still retain a slight crispness. Remove the cooked vegetables from the skillet and set them aside on a plate.
  4. **Cook the Chicken:** In the same skillet, add the remaining 1 tablespoon of olive oil and another tablespoon of butter. Increase the heat slightly to medium-high. Once the pan is hot, add the dredged chicken tenderloins. Cook them for 3-4 minutes on each side, or until they are beautifully golden brown and cooked through. It’s crucial not to overcrowd the pan; cook the chicken in batches if necessary to ensure even browning and proper cooking. Once cooked, remove the chicken from the pan and set it aside with the vegetables.
  5. **Prepare the Scampi Sauce:** If your skillet is very hot, remove it from the heat for a minute to cool down slightly. Reduce the heat to medium-low. Add the remaining 2 tablespoons of unsalted butter to the skillet and let it melt. Once melted, add the minced garlic and sauté for about 20-30 seconds until fragrant. Be careful not to burn the garlic.
  6. **Thicken the Sauce:** Add 3 tablespoons of the leftover seasoned flour mixture (from step 2) to the skillet with the garlic butter. Cook the flour, stirring constantly, for about 1 minute, or until it’s no longer white and has a slightly nutty aroma.
  7. **Deglaze and Add Liquids:** Slowly pour in the chicken broth, stirring continuously. Use a stiff rubber spatula or a wooden spoon to scrape any browned bits from the bottom and sides of the pan. These “fond” bits are packed with flavor and will enrich your sauce. Once the broth is incorporated, add the heavy cream and whisk vigorously until the sauce is smooth and free of any lumps. Let the sauce simmer gently for 2-3 minutes, or until it begins to thicken to your desired consistency.
  8. **Finish the Sauce:** Slowly stir in the fresh lemon juice. Taste the sauce and adjust the seasoning (salt and pepper) as needed. The lemon juice brightens the sauce and balances its richness.
  1. **Combine and Serve:** In a large bowl or pot, combine your freshly cooked angel hair pasta with the rich scampi sauce and the sautéed bell peppers and onions. Toss lightly to ensure the pasta and vegetables are evenly coated with the sauce.
  2. **Final Plating:** Serve generous portions of the pasta and vegetable mixture onto individual plates. Top each serving with the perfectly cooked chicken tenderloins.
  3. **Garnish and Enjoy:** For an extra touch of flavor and visual appeal, garnish with a sprinkle of grated Parmesan cheese, fresh chopped parsley, or a pinch of red pepper flakes if you enjoy a little heat. Serve immediately and savor your homemade Olive Garden Chicken Scampi!

Amira’s Expert Tips for Perfect Chicken Scampi

Achieving restaurant-quality Chicken Scampi at home is all about a few key techniques and smart choices. Here are Amira’s top tips to ensure your dish is nothing short of spectacular:

  • **Choose Chicken Tenderloins:** For this particular recipe, chicken tenderloins are truly the best choice. They are naturally more tender than chicken breasts and cook faster, making them less prone to drying out or becoming tough, even if you slightly overcook them. Their size is also ideal for quick searing and uniform cooking.
  • **Avoid Overcrowding the Pan:** When searing the chicken, it’s essential to cook it in batches if necessary. Overcrowding the pan lowers the temperature, causing the chicken to steam rather than sear. This prevents it from developing that beautiful golden-brown crust and deep flavor that is so desirable. Give each piece enough space to achieve perfect caramelization.
  • **Don’t Skip Deglazing:** Those browned bits (known as “fond”) stuck to the bottom of the pan after cooking the chicken and vegetables are pure flavor gold. Use a stiff rubber spatula or wooden spoon to scrape them up when you add the chicken broth to the pan. This process, called deglazing, incorporates all those delicious caramelized juices into your sauce, adding immense depth and complexity.
  • **Whisk for a Smooth Sauce:** When adding the heavy cream and chicken broth to create your scampi sauce, use a whisk diligently. Whisking continuously helps to prevent lumps, especially after adding the flour, ensuring your sauce is luxuriously smooth and evenly thickened.
  • **Adjust Sauce Thickness:** If you prefer an even thicker sauce, you can continue to reduce it on low heat, stirring occasionally, until it reaches your desired consistency. Conversely, if your sauce becomes too thick, simply add a splash more chicken broth, heavy cream, or even milk (a quarter cup at a time) until it thins to your liking.
  • **Fresh Garlic is Key:** While garlic powder can be convenient, fresh minced garlic is irreplaceable for the authentic, pungent, and aromatic flavor profile of scampi sauce. Take the extra minute to mince fresh cloves – it makes a world of difference.
  • **Balance with Lemon Zest:** For an extra bright and vibrant lemony flavor, consider adding a teaspoon of fresh lemon zest along with the lemon juice. The zest contains essential oils that deliver a more intense citrus aroma without adding extra acidity. If you’re not a fan of lemon, you can simply omit the lemon juice and zest.
  • **Taste and Adjust:** Always taste your sauce before serving. Adjust salt, pepper, and lemon juice as needed. A perfect scampi sauce should be rich, savory, slightly tangy, and well-seasoned.
  • **Don’t Overcook Pasta:** Cook your angel hair pasta (or preferred pasta) to al dente according to package directions. It will continue to cook slightly when tossed with the hot sauce. Overcooked, mushy pasta can detract from the entire dish.

Storage and Make-Ahead Tips

Planning ahead or managing leftovers for your Chicken Scampi is easy with these simple tips:

  • **Storage:** Store any leftover Olive Garden Chicken Scampi in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stovetop over low heat, adding a splash of chicken broth or heavy cream if the sauce has thickened too much.
  • **Make Ahead:** While this recipe is best enjoyed fresh, you can definitely do some prep work in advance to save time on busy weeknights. Season and dredge the chicken up to 12 hours before you plan to cook. Store the dredged chicken in a single layer on a plate, tightly wrapped with plastic wrap, in the refrigerator. You can also pre-chop your vegetables (onions and bell peppers) and store them in an airtight container in the fridge. Cooking the pasta ahead of time is also an option, but it’s often best when freshly made to prevent it from becoming sticky.

Variations to Customize Your Chicken Scampi

This Chicken Scampi recipe is wonderfully adaptable, allowing you to tailor it to your family’s preferences or whatever ingredients you have on hand. Get creative with these delicious variations:

  • **Heartier Additions:** To make the dish even more substantial and flavorful, consider stirring in 1-2 cups of cooked, crumbled bacon or browned Italian sausage (mild or spicy) along with the chicken at the end.
  • **Vegetable Boost:** Enhance the nutritional value and color by adding more vegetables. Broccoli florets, sliced mushrooms, baby spinach (stirred in until wilted), or even asparagus spears can be added with the bell peppers and onions, or during the last few minutes of the sauce simmering.
  • **Adjusting Sauce Consistency:** If you prefer a thinner sauce, simply increase the chicken broth by adding an extra half a cup or more until you reach your desired consistency. For a thicker sauce, let it simmer a bit longer on low heat.
  • **Extra Saucy Pasta:** For those who adore their pasta drenched in sauce, feel free to double the sauce recipe. This ensures every strand of pasta is generously coated in that luscious garlic butter goodness.
  • **A Touch of Spice:** If your family enjoys a bit of heat, incorporate crushed red pepper flakes into the sauce while it’s simmering. Start with a quarter teaspoon and add more to taste.
  • **Herbaceous Twist:** Experiment with fresh herbs beyond parsley. Fresh basil or oregano, added at the very end, can introduce new aromatic dimensions to the scampi sauce.
  • **Cheese Varieties:** While Parmesan is traditional for garnish, consider stirring in a handful of shredded mozzarella or a blend of Italian cheeses into the warm sauce just before serving for an extra creamy, cheesy texture.
Olive Garden’s chicken scampi is a popular dish you can easily create at home.

Frequently Asked Questions About Chicken Scampi

What is scampi sauce made of?

Traditional scampi sauce is typically a rich, flavorful concoction made primarily from butter, fresh garlic, and often white wine (though we use broth here for a wine-free version). It’s brightened with lemon juice and finished with fresh parsley, and sometimes a touch of cream to enhance its velvety texture and luxurious mouthfeel. It’s known for its buttery, garlicky, and slightly tangy taste that perfectly complements chicken or seafood.

Can I use chicken breast for this recipe?

Yes, you can certainly use thin-sliced chicken breasts for this recipe. If using thicker breasts, it’s best to butterfly them or pound them to an even thickness (about ½ inch) to ensure they cook quickly and evenly. However, chicken tenderloins are generally preferred for this dish because their natural tenderness makes them more forgiving and less likely to become tough or dry if slightly overcooked.

What does “scampi” mean?

In Italian, “scampi” actually refers to langoustine, which is a small, prawn-like crustacean. In American cuisine, however, the term “scampi” has evolved to describe a style of preparation and a type of sauce, most famously associated with shrimp (shrimp scampi). This sauce is characterized by its prominent use of butter, garlic, lemon, and often white wine or broth, serving as a rich and flavorful accompaniment to various proteins, including chicken in this recipe.

What kind of pasta is best for Chicken Scampi?

Angel hair pasta is the traditional and highly recommended choice for chicken scampi due to its delicate, thin strands that perfectly absorb and cling to the light, buttery sauce. Other great options include spaghetti, linguine, or fettuccine, which also have enough surface area to hold the sauce wonderfully. The key is to cook the pasta al dente so it maintains a slight bite.

Can I make this dish spicier?

Absolutely! If you enjoy a kick of heat, you can easily make this chicken scampi spicier. Add a pinch or two of crushed red pepper flakes to the skillet when you sauté the garlic. This will infuse the entire sauce with a pleasant warmth. You can adjust the amount to your personal preference, starting with a quarter teaspoon and adding more as desired.
